Specialty coffee is the highest grade of coffee available, representing less than 5% of the world’s total coffee production. It refers to coffee that is grown in ideal climates, carefully harvested, and graded at 80 points or above on a 100-point scale by the Specialty Coffee Association (SCA).

Every step—from the altitude where the beans are grown, to how they’re processed, roasted, and brewed—affects the final cup.
